- Prepare the Noodles: Cook the noodles according to package instructions until al dente. Drain and toss with a teaspoon of sesame oil to prevent sticking. Set aside.
- Cook the Protein: (Optional) Heat 1 tablespoon of oil in the wok over medium-high heat. Add your protein choice and stir-fry until cooked through. Remove and set aside.
- Stir-Fry the Vegetables: In the same wok, heat the remaining 1 tablespoon of oil. Add garlic, ginger, and green onions. Stir-fry for 30 seconds until fragrant. Add cabbage, carrots, and bell peppers. Cook for 3-4 minutes until the vegetables are tender but still crisp.
- Combine Everything: Return the protein to the wok. Add the noodles and toss to combine. Pour the sauce over the mixture and stir well to coat evenly. Stir-fry for another 2-3 minutes.
- Garnish and Serve: Sprinkle with sesame seeds and additional green onions. Serve hot.
